Ayu Masamune is a charming family-run brewery in Niigata. Run by the Iiyoshi family since 1875, the master brewer is currently the owner’s daughter. Female Toji (head sake brewer) are currently still very rare in the industry. This is a fresh and clean sake, with fragrant melon and rice aromas with a mild elegant taste.
